This Spirited Sunday is dedicated to Wellington Creek Bourbon. Made with a blend of corn, rye, and barley and aged in American oak for 5-7 years, this spirit is finished in Napa Valley Pinot Noir barrels. I liked the spice, nuts, and fruit aromas on this small batch bourbon. A quintessentially American Spirit, bourbon has made a return to my rotation after a very long absence and a terrible encounter with it when I was a much younger.
