With the holidays upon us, it seems fitting to drink as much sparkling wine as possible and to celebrate getting to this time of the year, no small feat in this two-year long pandemic.
I actually never need a reason to drink sparkling wines but I do think it’s an achievement to be here and celebrating. My son got his second vaccine yesterday so I am really feeling joy for science and the ability to get vaccinated, even at the tender age of 7.
I opened a bottle of Cremant de Bourgogne made by Clotilde Davenne for this occasion. This NV sparkler is 60% Chardonnay and 40% Pinot Noir.
The wine is lovely with a gorgeous perlage, racy acidity, and fresh white fruit and floral aromas and flavors. With mineral and toast notes too, I found this wine to be both elegant and complex.
As a winemaker, Davenne has considerable experience throughout Burgundy. She apparently grew up spending much time in the woods and honing her nose to the aromas that nature offers us. Lucky for us, she became a winemaker. I can’t wait to taste more of her wines.
