I am thinking about sparkling wines as the holidays approach. I love sparkling wines of all kinds and made in the different procedures that create them, be it the charmat method or the traditional method, or the ancestral method. I am endlessly interested in these wines and think you can drink them throughout the meal.
The acidity in these wines always works with fatty foods but also with drier ones. I think bubbles are among the most versatile of wines for this reason and others. They are often lower in alcohol as well which makes them easier to pair than those with a lot of alcohol.
This year I have had a lot of fun sparkling wines, Cremant, Cava, Prosecco, Lambrusco, Trento DOC, Alta Langa, Asti, and others.
I look forward to trying many more in 2022.
